Russian Cheese Spread

The easiest appetizer or bread course ever!! Simply grate Gouda cheese, mix with minced garlic and mayo, chill and done! A marvelous, deliciously easy Russian creation!

Could anything be easier? Grate the Gouda. Add mayonnaise and minced garlic. Let it meld. Slice up a crusty loaf and you have a great snack or appetizer. Ten minutes - tops, if you can’t wait for the flavors to blend.

My brother spent some years working in Russia and brought this recipe back to share with the family. My daughter, Lindsey, upon sampling it many times, proclaimed it to be so delicious that we should make it everyday. “Everyday?” I asked. Her emphatic reply, “Everyday. Everyday!” and thus our family name for it was born. It seemed to lack another anyway, except perhaps “Russian Gouda Cheese Spread with Garlic”. So “Everyday” it is, though I wouldn’t recommend making it everyday. The garlic alone might create issues.

Speaking of garlic, who’s in charge of how much to add? For one son-in-law 10 cloves, to the stinging level. For the garlic-timid among us, perhaps start with two cloves of this marvelous aromatic. Determining how much garlic to add may be the hardest part of creating the dish!

Russian Cheese Spread: “Everyday, Everyday”

2 cups grated Gouda cheese

3/4 cup mayonnaise

3 - 4 finely minced cloves of garlic (more if desired)

1 large French Baguette, cut into 1/2 inch thick slices or crostini made from 1 French Baguette

2 tablespoons olive oil

garlic powder

-Shred cheese on medium-size grate. Mix with mayonnaise and minced garlic, Cover and chill for at least 1 hour.

-Slice large baguette into 1/2 inch thick slices.

-To prepare crostini (toasted bread): Slice baquette into 1/2 inch slices. Brush a cookie sheet with olive oil and place each baguette bread slice on sheet then brush tops of each slice with olive oil then sprinkle with garlic powder. Bake in a 350 degree oven for 10 minutes. Remove and let cool.

-Place Cheese Spread in a serving bowl with a cheese spreader, alongside a basket of sliced bread or crostini. Serves 8.

If you like garlicky, garlic with more garlic, add more to the recipe! Vampires beware!
