Garlic butter Rice

Buttery, garlicky rice. A perfect side for any meal, but so delicious you may want to eat it as your entree!

Garlic Butter Rice

6 - 8 cloves garlic very finely sliced 1 - 2 tablespoons vegetable oil 1 tablespoon minced garlic ½ red bell pepper, finely diced 4 tablespoons butter salted or unsalted, divided 1 ½ cups long grain white rice 1/3 cup minced fresh parsley or 1 tablespoon dried parsley 2 ½ cups chicken broth ¼-½ cup sliced green onions salt and pepper to taste ‍ ‍

-Heat oil in a large saucepan over medium heat. Add garlic slices and saute, stirring constantly, until golden and crisp. Transfer garlic slices to paper towels to drain. Pour out excess oil then return the saucepan to the stove.

-Add 2 tablespoons butter to the saucepan. Once melted, add the minced garlic and red bell pepper. Cook, stirring, for 1 ½ minutes or until the garlic starts to turn light golden. Stir the rice into the butter until each grain is coated. Add the chicken broth to the saucepan then cook over medium-high heat until the water begins to boil. Place a tightly fitting lid on the pan, then immediately turn the heat down to low.

-Steam over low heat for 15 - 20 minutes. Remove the saucepan from the heat, and without taking off the lid, let it rest for 10 minutes. Remove the lid then fluff the rice with a fork. Place rice into a serving bowl, then stir in the parsley and remaining butter until melted. Taste for seasoning and add more if desired.

-Garnish the top of the rice with the fried garlic slices and green onions. Serve warm. Makes 4 servings as a side dish.

Saute the minced garlic and chopped red pepper in butter. Add the rice and broth, then simmer over low heat until the rice is tender.

Stir in the rest of butter and chopped parsley. Taste for salt and pepper.

Mound rice into a serving bowl.

Garnish with crispy garlic slices and chopped green onions.
