Triple Chocolate Oatmeal Cookies

A big bold, chewy cookie with 3 chocolates, oatmeal and loads of nuts! No shy cookie, this!

The triple chocolate? Cocoa in the batter, semi-sweet and white chocolate chips. Never too much too much chocolate!

Oatmeal provides a nice toothy bite that convinces you that you must be eating something healthy. One of my daughter’s favorite cookies, these are easy to make and filling with fiber and you guessed it, chocolate!

Oatmeal cookies are nothing new but this is one I can get in to!

Triple Chocolate Oatmeal Cookies

1/2 cup shortening

1/2 cup butter, softened

3/4 cup granulated sugar

3/4 cup packed brown sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

2 eggs

1 teaspoon vanilla extract

1 1/3 cups all-purpose flour

1/3 cup unsweetened cocoa powder

2 1/2 cups rolled oats

1 cup semisweet or bittersweet chocolate pieces

1 cup white chocolate chips or peanut butter-flavored pieces

1 cup chopped macadamia nuts, walnuts or pecans

1/3 cup toffee baking pieces

-Preheat oven to 350. In a large mixing bowl beat shortening and butter with an electric mixer for 30 seconds. Add sugars, baking powder, baking soda and salt. Beat mixture until combined.

-Add eggs and vanilla then beat until just smooth. Add flour and cocoa powder at low speed and mix until just combined. Stir in rolled oats, chocolate pieces, toffee bits, and nuts by hand.

-Scoop dough with an ice-cream scoop or a 1/4 measure cup and place 3 inches apart on a cookie sheet lined with parchment paper or sprayed with cooking spray.

-Bake cookies in oven for 15 - 16 minutes or until just set. Let stand 1 minute on cookie sheet then transfer to wire racks to cool. Make about 24 cookies.

Scoop dough by 1/4 cup scoop onto cookie sheet.

Serve cookies warm or at room temperature for a chewy, fudgy, delight!

PERNSNICKETY NOTES:

**Bake until centers are just done, 13 - 15 minutes depending on your oven. Serve cookies while still warm for a fudgy center.

**The addition of toffee bits is optional but it adds another delightful complementary flavor. As are nuts - if you love nuts, add all three types!
